A traditional 東北 region sweet, relying on the rising power of soda and vinegar. Has lots of brown sugar, so it's quite suitable for autumn.

• 45 gr egg
• 110 gr brown sugar

➡️ Whisk together, then add, in that order:

• 50 gr honey (I used pine and it was fine)
• 90 gr water (seems like a lot, but it's fine)
• 3 gr baking soda (Natron) in 3 gr water
• 6 gr oil (I used walnut, which was fine, but didn't really make a difference)
• 1 Tbsp 醤油
• 2 tbsp vinegar (I used black vinegar, but I don't think you can taste it in the finished sweet. Cider vinegar might be very autumnal!).

Finally, sift in:

• 150 gr flour, 2 gr baking powder.

Fold, then steam in baking sheet lined 流し器 (I steamed it in the Creuset rather the 蒸籠(せいろ) and it turned out great):

• 10' with lid ajar full strength
• 10' with lid, cloth wrapped, closed, medium strength
• Then sprinkle with sesame seeds
• Steam for another 20' with the lid closed, medium strength.
