If I were a teacher, I'd teach this on an eight-cornered tray. I like the idea that you can really make out how the highest
点前 of 侘び茶,
行の行, and this 盆略 are directly related.
The official way, however, is to buy a specific tray, of course; the 円能斎's 山道盆. I have no love whatsoever for that tray, but I think the 千歳盆 lid is fine.
Apart from that, go crazy!
点前
建水 goes directly where it's going to live (if you stay facing the
風炉).
Also, it doesn't move when cleaning the
茶杓 Finally, the closing is: move 薄茶器・ポンポン, and then
鉄瓶. (For 運び, it's ポンポン (and 腰)・棗 and
茶碗)
宗室 notes: Because it's such a simple
点前, there's no need to move away from いまえ when you leave with the
建水; but acknowledges that a lot of teachers teach it that way.
There are two ways you can do the 点前:

Slightly facing the guest. In that case, move the
建水 to the
炉 position after moving the tray.
