ホモテナシ

Very basic and simplified version from cha zhi dao:

  • green tea: 5 gr / 100 ml water at 80°C, glass gaiwan, trying not to overheat tea. Leave some water with the leaves. Drink the first brew.
  • yellow tea: 5 gr / 100 ml water at 90°C, glass or thin ceramic
  • white tea: 5 gr / 100 ml water at 100°C, thick ceramic or Yixing clay. Drink the first brew.
  • red tea : 5 gr / 100 ml water at 90 (buds) to 100°C (leaves), drink from first brewing, thick ceramic or Yixing clay.
  • oolong: 7 gr / 100 ml at 100°C. Use warming water to preheat cups. Pour away first short brewing to allow opening the leaves / use to scent high nosing cups. Pour off first brewing from nosing cup. Second brewing will be drunk. Pour subsequent brews into nosing cups, unless guest has turned his nosing cup.
  • pu er: 7 gr / 100 ml at 100°C. Young sheng up to 5 years in gaiwan, shu and aged sheng in Yixing. Teapot will steam the leaves, which will help to open them. Pour off first infusion.
