ホモテナシ

  • originally made from seven flours (soy, azuki, sesame, chestnut, persimmon, sugar cane and cowpeas). I think, however, that “flours” is not taken literally here, but rather means “ground stuff” and includes pastes and such.
  • It's basically just a 求肥-wrapped 中餡. However, the 求肥 is coloured with truckloads of cinnamon and includes black sesame seeds, so that the finished sweet has the texture and speckles of little boards. Then you also can brandy three lines in it, and it looks very convincing.
  • However, like this, it tastes a little bit one-dimensional.

Ideas

  • I think it would be very nice to add some 干し柿 to the 中餡. Also, chestnut is a good flavour, so I could add some chunks of that, as well.
  • The 求肥 needs colouring anyhow, so you could add some brown sugar when you make it. Like this, you don't need to add so much cinnamon.
  • You could make the 中餡 from cowpeas (= black-eyed peas), of which there are also some red cultivars. But not sure if this will be worth its while.
