茶杓 position and lid position when scooping depends on the 茶器, but for 拝見, you treat it like a 茶入.
If you do it with a 長板 or a 台子 and need to handle the 大津袋 with L:
- After sorting the 棗, fold in the top with R, then hold sideways with R so that the fabric rests on your fingers. From here, you can scissor it with your L.
- id. when picking it up for 拝見: Scissor with L, rehold with R and put on your L.

The books say to scoop 3 times then dump all at once, but KM, HY and also CJ prefer to dump the tea in two goes (akin to 和巾): First, insert 茶杓 to make a blockade, then remove it to unleash the first load. Then insert again and scoop and dump the rest.
