- I did 初炭 with my fish 風炉, so I didn't need a 灰器, but needed to take care of the 鐶.
- The space for the 建水 is big enough to fit a normal 建水, which I paired with a 栄螺 蓋置)
- Then I did 濃茶 in a 棗 in its 大津袋
- Finally, I did 薄茶, finishing with 総荘.
炭
- 羽箒 and 香合 are placed in the shape 八 on the top shelf.
- Come in with the 炭斗, loaded with 鐶 and 火箸. It also has the 台-charcoal, which you can use to take out stinkers.
- Walk on the R. Put it down, then shift to the L. Lower the 鐶 of the 風炉, then: 羽・香合. The latter is not put on the board, but in front of it!
- Close lid with 帛紗, attach 鐶, sort 釜敷, shift forward, take out 釜, and shift it to the L of the middle! 鐶 to its R. First feather, and because my 風炉 is just round without a window, KM suggested doing it in the お握り-shape (left, right, front from L to R), but in my notes, I have 4 strokes somewhere.
- Lay coal, second feather (3 strokes), placing it on the 炭斗, then laying the incense.
- Sort the 香合, then take the 釜 to 45°.
- Here I knew I wasn't going to do 後炭, so I got up there, came back with the 水次 (spout pointing to the L): 茶巾・蓋置・釜蓋 etc. Put the 蓋置 back before you moisten the 釜.
- Put the 釜 back, shift back, open the lid with bare fingers, raise 鐶. Ideally, shift before 炭斗, then leave; but I tend not to do that.
- Come back with the 薄茶器, then turn to answer 拝見 questions.
濃茶
- Place 棗 in its 大津袋 in front of the 水指.
- Come in with 茶碗, then with the 建水. The way I learned it is that the 蓋置 is in the 建水 with the shell up, so you need to get it out first, lifting the 柄杓 a bit, then turning it L to R. Some videos, though, place it ready to use in the 建水, which also has an appeal.
- In 大津袋, you place the lid and hold the 茶杓 as you would in 薄茶. 3 scoops, dump, then wipe where there was tea.
- They are arranged, again, in front of the 水指.
- Normally, in 濃茶 with the 栄螺, you'd lift the 柄杓 and move the 蓋置 as is, after the guests ask for 拝見, but since I wasn't using a 平建水, you can do it as always, turning back the 蓋置.
- When cleaning the 棗, don't forget that you're in 濃茶!
- Then decorate the 棚: I placed 柄杓 diagonally on the 天板, and the 蓋置 like in 桑小卓 near the 水指.
- Come back with the 片口 水次, sitting directly in front of 水指 and placing the 水次 straight. You could make a case for 半出し, in which case you'd place the lid in front; but I think here 2 hands and leaving the 水指 (and 蓋置?) as they are is better.
- Then you come back with the 建水, again sitting L.
薄茶
- Come in with 茶碗, then take 建水. Get 薄茶器, and move 茶碗. Sort 蓋置 (turning it, in my case), then get 柄杓.
- I wanted to finish 総荘, so clean the 茶碗 ofter お仕舞い, wring out the 茶巾 and refold.
- Put 柄杓 on 天板, shift to put 蓋置 near 水指. 茶碗 and 薄茶器 go on the 天板.
- Replace 建水, and put 帛紗 on the 水指's L side (since mine didn't have a lacquered lid). On the 天板 also looks nice; or probably tied to a pillar.
